Caramel Truffles

A traditional truffle can be improved by using a homemade caramel which gives these candies warmth and the depth flavour. Surely your kids will love this tasteful candy.

Like most of the truffles, these candies should be chilled for a longer time. So, make sure that you did it so the crunchiness would remain.

Caramel truffles when topped with the Candied Cacao Nibs make it lovelier. This is optional, however, it add great crunch to your truffles.

Ingredients:

  1. granulated sugar (1/4 cup)
  2. water (2 tbsp)
  3. lemon juice (1/2 tsp)
  4. cream (2/3 cup)
  5. chocolate (semi-sweet) (1 lb 5 ounces)
  6. cocoa powder (1/2 cup)
  7. Nibs of candies cacao (optional)

Preparation:

  1. Combine sugar, water as well as the lemon juice to small saucepan. Heat in an over a medium heat then stir till the sugar dissolved.
  2. Just continue heating it and let the mixture boil. Brush a wet pastry so crystallization will be prevented. Let mixture cook till a caramel color is achieved. When the color is already in medium-brown, it's time to remove the mixture from heat.
  3. Meanwhile, the cream should be scalded in the saucepan till the small bubbles will form in the pan's edges.
  4. Melt the 9 ounces chocolate in the microwave-safe bowl, using double boiler will do.
  5. Return heating the caramel and pour hot cream to the caramel. Stir it while heating. Just continue stirring and heating it until caramel combines completely to the cream.
  6. Now, the caramel-cream will be poured to the chocolate which was melted a while ago. Stir it gently until mixture is already well-combined. Use a cling wrap to cover chocolate and let it cool in a room temperature. When it's already cool, place it in the refrigerator for 2 hours until it is firm enough and can be scooped.
  7. Form truffles now. You may use spoon in scooping an inch truffles to the baking sheet. Alternately, fill the piping bag and the pipe of 1-inch mounds into the baking sheet that you prepare. Either way, the truffles should be placed inside the refrigerator for 1-2 hours so that it will be firm.
  8. Pour cocoa powder to the sheet of the waxed paper. Sprinkle the cocoa using your hand, then roll truffle mounds to form balls. Then place it again in the refrigerator for 1-2 hours.
  9. Temper the 12 ounces chocolate.
  10. Dip formed truffles into the chocolate then place it on the baking sheet. Put candied cacao nibs desired. Repeat these instructions to the other caramel truffles. Chill into the refrigerator for 15 minutes. After that you can serve it.

That's how easy to make caramel truffles. Surely, the whole family will enjoy eating these crunchy truffles while watching television together or having a family bonding outside the house.
